Fresh Strawberry Sugar Free Freezer Jam

We had SO SO SO many strawberries.  Even after we froze a million of them, I still needed to figure out a way to save the others.  FMIL was craving some jam… as pbnj’s are essential lunch time staples in our household- I thought why not?  Since, we swear by sugar free jam as well, this was the easiest way to rescue the berries and have great tasting jam for sammies…without having to make an extra trip to the grocery store!

Jam!

All you need is:

Canning jars

2 cups strawberries

1 cup water

1 small package of sugar free strawberry gelatin

so super easy and delish!

1. Boil the jars or dishwasher them to sanitize them.

2. Wash the berries

3. De-stem and cut into half or quarters depending on how large they are.

4. Throw into saucepan with 1 cup of water and start mashing!  Add in the gelatin after about a minute.

5. Bring to a boil, stirring frequently.

6. Lower heat and simmer for about 2 minutes.

7. Jar the yummy jam!

8. Refrigerate at least overnight for the jam to achieve thickness and jam-like consistency!

9. Enjoy!

FYI: It will stay good in the fridge for about a week and you can freeze whatever you don’t use which will keep good for about a month!
